Zucchini Cake Madness!


  •  1 medium zucchini, shredded
  • 1/2 onion, shredded
  • 1/2 yellow pepper
  • 1 egg
  • 1 cup breadcrumbs


  1. Place all shredded veggies into a bowl and sprinkle with salt, let sit and then wring them out in a towel 
  2. Add egg and bread crumbs and mix together until well combined
  3. If you want to fry them, oil a pan and wait until it’s hot (I always flock a tiny bit of water and see that it sizzles) then form the mixture into balls and drop in the pan. Let cook for 2 minutes, flatten and cook until one side is golden brown and flip.
  4. If cooking in the oven, set oven to 400 degrees, lightly oil a cookie sheet and drop balls of mixture onto the sheet, flattening slightly into thick patties. Bake for 10 minutes, flip and bake for another ten.
  5. Serve with garlic aioli! 3 tbsp mayo + 1 tsp lemon juice + 1 tsp minced garlic

    This looks pretty interesting. I have to try it, because I never thought to make a cake out of zucchini.
