So you want to impress your Valentine with some snacks and drinks this weekend, but you’re a mess in the kitchen? NEVER FEAR!
These two recipes require ALMOST no cooking, taste fresh and amazing and look great. You may want to purchase a pack of gum if you have lots of smooching planned, these apps are simple but packed with garlicky-goodness.
SPICE UP YOU LIFE BRUSCHETTA:
- 4 plum tomatoes, diced
- 1/2 jalapeno (i like to leave some seeds to keep things spicy!), diced
- 1/4 red onion, diced
- 4 garlic cloves, minced
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- salt + pepper to taste
- baguette, cut into thin slices (about 1/2 a cm thick)
Chop up all of your ingredients and put them into a bowl, add olive oil, balsamic and salt and pepper and stir together. (If you have time let this sit for 20 minutes or so). Spoon mixture onto sliced baguette and place on a cookie sheet, place in a 350 degree oven for 7-8 minutes and serve on a nice platter to impress!
YOU’VE GUAC-A LOVE IT!
- 2 ripe avocados
- 3 cloves of garlic, minced
- 1/2 cup cherry tomatoes, quartered
- juice of 1/2 a lime
- 1 tsp salt
- baguette, cut into thin slices (about 1/2 a cm thick)
Place sliced bread on a cookie sheet in your 350 degree oven, and bake for 5-8 minutes, until crisp, remove and set aside. Remove the pits from your avocados and slice into cubes while in the skin. Remove avocado into a bowl using a spoon. Add garlic and salt and mash the mixture (use a fork, a pastry cutter or a potato masher!). Once mashed stir in tomato and lime juice. Pile on top of toasted bread for a more special version of guac and chips.
