I love weekend mornings, and this weekend was the first one in about 4 months where it was cool outside. It was raining when I woke up everything about it screamed yummy breakfast, hot coffee and warm blanket.
I LOVE this breakfast, it’s got lots of interesting flavour combos and textures and is perfect for a special treat.
- rye toast
- 1/4 avocado
- chilli flakes
- feta cheese
- fried egg
- Get your pan hot and start to fry your egg – while you’re frying get your toast toasting!
- Once your toast is done, scoop some avocado onto it and smash it so it spreads around.
- Sprinkle with chilli flakes and feta, put egg on top once finished and you’re done!
- Break the yolk so you get the yolk flavour in each bite and enjoy.
Repeat if desired 😉
