Broccoli cheddar soup

Ummmm it’s been raining all weekend which means it was time for the first soup of the season.


  • 1/2 cup butter
  • 1 tbsp flour
  • 1 onion, diced
  • 3 garlic cloves, diced
  • 2 large bushels of broccoli
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 2-3 cups cubed old cheddar
  • 1 cup parmasan


  1. In a hot pot melt butter, add onions and garlic and cook until tender add flour and stir
  2. Chop broccoli into small pieces and add to put, cover with chicken stock and boil. Cover pot and cook for 8 minutes, add pepper
  3. Add heavy cream and begin to stir in cheese
  4. Stir until thick
  5. Serve with shredded cheese
