EAT: Chipotle Adobo Pork Tacos

CONFESSION Mexican food is my favourite. It’s just so good! Last weekend I decided that we would spend Sunday making a Mexican feast, including making tortillas from scratch.  DO NOT BE INTIMIDATED, it was way easier than I thought.


  • 1 can chipotle peppers in adobo sauce
  • 1/2 cup of fresh squeeze pineapple juice
  • 2 tbsp vinegar
  • 3 cloves of garlic
  • pork tenderloin
  • 1 diced onion (set aside)

Instructions: Finely chop the garlic and put all ingredients, except for the onion, in a sauce pan until it boils. Remove from heat and blend in the food processor (you should end up with a semi-thick paste like substance)

Slice the pork tenderloin and place in bowl, pour marinade over top and mix with a spoon until ever piece is well covered.  Cover and put in fridge to marinade for 5 hours (or over night)

To cook, oil a large skillet and cook the pork until tender, remove pork from pan and chop on a cutting board until you have a more ground feel.  While you are chopping the pork put your diced onions in the pan to soak up marinade and start to cook.  Once onions are cooked put pork back in the pan to mix.  After everything is mixed place meat in a serving bowl and set aside.


  • 1 cup masa harina
  • 1/4 – 1/2 cup hot water
  • 1-2 tsp salt

Instructions: Mix the mara harina with the salt and add warm water to form dough into a ball.  If you have time set aside and let rest for 30 minutes.  Form dough into small ping pong sized balls, place ball between two sheets of wax paper and place in a tortilla press (if you have one) and press. If you don’t have a tortilla press (like me!) I flatenned mine between the paper on the counter with the bottom of a frying pan.

Heat dry pan on the stove, make sure the pan is hot enough that if you drip a drop of water into it it sizzles and boils off quickly.  Cook tortillas for 2-3 minutes on each side and serve!

  • avocado, chopped
  • feta cheese
  • pork
  • tortillas

Instructions: Place pork, pinapple, avocado and feta in tortilla….DEVOUR.
