EaT: maple soy glazed salmon & roast lemon potatoes

My family on the East Coast would be embarrassed to know that I’ve never  cooked salmon before… Oops!

I decided to dive in when the boy brought home a huge piece of salmon from the grocery store and it turned out perfectly!

Paired them with lemon roasted potatoes and it was perfect.  I wish I had some asparagus for a side but… Next time!

MAPLE SOY GLAZE
Ingredients

  • 1/4 cup soy sauce
  • 1/3 cup maple syrup
  • 2 minced garlic cloves
  • 2 thick pieces of salmon

Instructions: Pre heat oven to 400 degrees.  For the glaze, mix together all ingredients and set aside. Place salmon in shallow dish and pour glaze over top, marinate in fridge for 30 minutes.

Place salmon on a baking sheet covered with tinfoil (you will thank me for this… Otherwise you’ll spend the next three days washing the baking sheet) and place in the over to cook for 15 minutes.

Pour the left over marinade into a sauce pan and cook on low heat stirring often until it thickens.  Once the salmon is done pour the glaze over top or eat it like FUCKING CANDY.

LEMON ROAST POTATOES
Ingredients:

  • 2-3 cups Red potatoes
  • Olive oil
  • Lemon
  • Salt and pepper

Instructions: Pre heat oven to 425 degrees. Half the red potatoes and spread them on a baking sheet, drizzle with olive oil and toss to cover. Cut slices of lemons and put them on top of the potatoes so the juices sink in while baking.

Bake for 20 minutes at 425, decrease to 400 degrees to cook the salmon and finish for 15 minutes.
