These jerk chicken tacos were the bomb, and with pickled beets and feta they are the perfect combination of spicy, sweet, and salty.
Which is why I call them TRIPLE THREAT tacos.

- Chicken drumsticks
- Jamaican jerk marindade
- Jamaican jerk rub
Instructions: put all ingredients above in a ziploc bag, shake and toss the chicken around until each piece is coated and leave I the refrigerator all day (or as long as possible a couple hours is fine. )
To cook the chicken fire up the BBQ and cook until firm (but not hard!)
TRIPLE THREAT TACOS
- Pickled beats
- romaine lettuce
- Yellow bell pepper
- Feta cheese
- Light Italian dressing
- Avocado (I forgot avocado in mine)
Instructions: chop lettuce and pepper and put in a bowl with feta and beets, lightly drizzle light Italian dressing and toss until coated. Once the chicken is done shred it off the bone and put on flour tortilla. Add the salad mixture on top and garnish with avocado.
Wrap it up and enjoy!!
Ps. Does anyone know where to buy corn tortillas? So frustrating to only ever see flour ones!
