The other day I was talking to my brother about how me and my guy are trying to make most things fresh. I mentioned that we usually keep some jars of pasta sauce for when we’re in a pinch and my bro challenged me that throwing a bunch of veggies in a pan and cooking it down wasn’t tough and would be super good.
Voila! He was right!
So now instead of stocking up on jars we’ll always buy a couple of extra tomatoes to make a quick sauce. This is NOT my home made meat sauce but if you want that recipe comment below!
You can use whatever in your fridge but I used…
1 yellow bell pepper
3 cloves of garlic
1/2 red onion
Salt and pepper to taste
Chop all of your ingredients and toss them in a frying pan with olive oil and let them render down for about 20 minutes. Add in basil (fresh is best!) and salt and pepper to taste.
Add in cooked pasta of your choice and serve with Parmesan.
