Food..Easy Chickpea Pitas

Our vegetarian challenge continues with these delicious pita creations!  We like spicy food so I used lots of spice on the chickpeas (probably more than the amount I’ve put here…just use your judgement!)

Avocado Spread:
Ingredients:

  • 2 whole avocados
  • 2 cloves garlic
  • splash of olive oil
  • 1 tbsp cumin
  • Juice of half a lime

Instructions:

  1. Chop avocado and garlic, add these and all other ingredients into a blender (I’m still using the immersion blender guys. *Cough Cuisinart hook me up!) blend until smooth and put aside.

Pitas:
Ingredients

  • 4 whole wheat pitas
  • 1 can chick peas (drained and rinsed)
  • 1/2 cauliflower (chopped into small pieces)
  • olive oil
  • 2-3 tbsp garam masala
  • 2-3 tbsp chipotle pepper
  • 2-3 tbsp chilli powder
  • feta cheese
  • sour cream/greek yogurt
  • salt

Instructions:

  1. Preheat the oven to 425
  2. Place drained and dried chick peas and cauliflower on a baking sheet, drizzle with olive oil and sprinkle with garam, chipotle, chilli powder and salt.  Bake in the oven for 15 minutes, take out and move around and place back in the oven for 15-20 minutes.
  3. Warm pita in oven (just to warm through, not to crisp up). Spread avocado on, sprinkle chickpeas and cauliflower, sprinkle with feta cheese and drizzle sour cream or greek yogurt.
