Eating: mom’s cauliflower soup

Ingredients:

  • 1 head of cauliflower
  • 1 onion
  • chicken stock (substitute with vegetable or beef if you’d like)
  • salt & pepper to taste
  • parmesan cheese (optional)

Instructions:

  1. Roughly chop the cauliflower and onion and place them in a pot on the stove
  2. Pour chicken stock over to cover the vegetables and put over heat.
  3. Bring to a boil and then reduce to a simmer (cook until vegetables are tender)
  4. In sections, use a blender to make the soup (you can use as much or as little of the broth as you want to obtain your desired thickness)
  5. Season with salt and pepper
  6. Add a tsp. of parmesan on top of the bowl and serve

*for a substitute for mashed potatoes follow the same instructions but blend with very little broth for a thick, creamy potato like texture
